Oreo Cupcakes

These are my famous Oreo Cupcakes. They are much easier than you might think and no, I did not come up with this myself.

It all started last year when I thought to myself, "Oreo cupcakes sound like a great idea!" I basically googled it and I found this recipe. The modifications I have made are that instead of pouring hot espresso to melt the chocolate, I microwave the chocolate in 30 second bursts in the microwave to prevent burning and substituted the espresso for buttermilk. Plus I think having the extra oreo on top was WAYYYY too much.

Buttermilk is not butter mixed with milk, it is a cultured milk. You can make this yourself my mixing 1 cup of milk with 2Tbs of lemon juice (please use the fresh stuff, NOT the bottle stuff) and allowing to sit until it is a bit like a yoghurt kind of texture.
