Ba Kut Teh, Pork Ribs Soup

This recipe is for those who are too lazy to buy the spice mix. Or those who wanted to buy the spice mix but the asian store was closed, aka me.

3g cracked black pepper
a couple of shakes of all spice
1 bulb of garlic, separated but not peeled
1 small red onion, whole and peeled
600g of pork ribs
1.2 litters of water
about 10 or so goji berries

Basically what you want to do is to blanch you pork in some boiling water then cut them into their pieces, so that you don't get all that gross scum in your soup.  Place all your ingredients except the goji berries into your pot and bring to the boil then add the ribs. Allow to simmer for about an hour, about half way in you can add in the goji berries.(you don't want the to cook too long or they will go to complete mush, unless you like that)

Right at the end you just season with salt then serve with dark soy sauce and rice. Dinner is served.


I got inspired to cook this because pork ribs were on special and I was craving home, it was after work and the Chinese store closed their door in my face. So I had to get creative to get the flavours. It tasted pretty good for being in a bit of a pinch.
